Ingredients

  • 2 lb chicken breast or steak, thinly sliced
  • 3 bell peppers, sliced
  • 2 onions, sliced
  • 3 tbsp olive oil
  • 2 tbsp fajita seasoning (chili powder, cumin, paprika, garlic powder, salt)
  • 16 small flour tortillas
  • Toppings: sour cream, salsa, shredded cheese, guacamole, lime wedges

Instructions

  1. Preheat the oven to 425°F and line two large baking sheets with foil.
  2. Toss the sliced meat, peppers, and onions with the olive oil and fajita seasoning until evenly coated.
  3. Spread in a single layer across the baking sheets, keeping the meat and vegetables spread out so they roast rather than steam.
  4. Roast 18-20 minutes, stirring halfway, until the chicken reaches 165°F (or the steak is done to your liking) and the vegetables are lightly charred at the edges.
  5. Warm the tortillas and set out with the fajita mix and toppings for everyone to build their own.
