Ingredients
1 lb flank steak, thinly sliced against the grain
2 tbsp cornstarch, divided
3 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
1/3 cup beef broth
2 tbsp vegetable oil, divided
2 cups broccoli florets
1 red bell pepper, sliced
1 carrot, thinly sliced
3 garlic cloves, minced
1 tsp grated fresh ginger
Cooked rice, for serving
Instructions
Toss the sliced beef with 1 tablespoon cornstarch and set aside.
Whisk together the soy sauce, oyster sauce, brown sugar, beef broth, and remaining cornstarch in a small bowl.
Heat 1 tablespoon oil in a wok or large skillet over high heat. Sear the beef in a single layer, in two batches so it browns instead of steaming, 1-2 minutes per side. Remove to a plate.
Add the remaining oil and stir-fry the broccoli, bell pepper, and carrot for 3-4 minutes until crisp-tender.
Add the garlic and ginger and cook 30 seconds until fragrant.
Return the beef to the pan, pour in the sauce, and toss until everything is glossy and heated through, about 1-2 minutes.
