Ingredients
1 1/2 lb boneless, skinless chicken thighs, cut into chunks
1 tbsp cornstarch
1 tbsp vegetable oil
4 garlic cloves, minced
1/3 cup honey
1/4 cup low-sodium soy sauce
1 tbsp rice vinegar

Instructions
Toss the chicken chunks with the cornstarch until lightly coated.
Heat the oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook 5-6 minutes, turning once, until golden and cooked through (165°F). Remove to a plate.
Lower the heat to medium and add the garlic to the skillet. Cook 30 seconds until fragrant.
Stir in the honey, soy sauce, rice vinegar, and red pepper flakes. Simmer 2-3 minutes until slightly thickened.
Return the chicken to the skillet and toss to coat in the sauce for 1-2 minutes.
