Ingredients

  • 1 medium head cauliflower, cut into florets
  • 3/4 cup all-purpose flour
  • 3/4 cup milk (or water)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 cup buffalo hot sauce
  • 2 tbsp melted butter
  • Ranch or blue cheese dressing, for serving

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Whisk together the flour, milk, garlic powder, and salt until smooth.
  3. Dip each cauliflower floret in the batter, letting the excess drip off, and arrange in a single layer on the baking sheet.
  4. Bake 15 minutes, then flip and bake another 8-10 minutes until golden and crisp at the edges.
  5. Whisk together the buffalo sauce and melted butter. Toss the baked cauliflower in the sauce until coated.
  6. Return to the oven for 5 minutes to set the sauce. Serve hot with ranch or blue cheese dressing.
