Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter, plus more for the pan
  • 1 tsp vanilla extract
  • Maple syrup, for serving

Instructions

  1. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry and stir just until combined — a few lumps are fine, don't overmix.
  4. Heat a griddle or nonstick skillet over medium heat and lightly butter it.
  5. Pour 1/4 cup of batter per pancake. Cook 2-3 minutes until bubbles form on top, then flip and cook 1-2 minutes more until golden.
  6. Serve warm with butter and maple syrup.
